Encyclopedia Britannica Online -- Click on the gray box to search for results in different reading levels.  

Gale/Infotrac -- Run a search in the yellow “Quick Search” box on the left.  You will get information from magazines, newspapers, reference sources, etc.

On the left, click “Vegetable Information” to access information for specific vegetables.

Garden Guides: Click on “Vegetable Guide” at the bottom, and then select your vegetable from the drop-down menu.

NUTRITIONAL INFORMATION

Nutri-Facts: You can run a search for different vegetables and other food items by using the “keywords” search bar in the middle of the page.

Nutrition Facts and Analysis: You can run a search for different vegetables and other food items by using the search bar in the top right corner.

 

The World’s Healthiest Foods: This site has only a select list of vegetables, but it provides nutritional information and history.
